MONTE CAPRINO MONDEL is made with whole goat's milk, pasteurized and then standardized with lactic ferments. It has a minimum maturation of 2 months in special conditions that result in a cheese without rind, a delicate, balanced flavor, with an unctuous finish on the palate.
We have the MONTE CAPRINO MADURO MANCHEGO type which differs from the previous ones due to its cylindrical shape and the black wax that covers it. The maturation time of MONTE CAPRINO MANCHEGO type is at least 6 months.
